Bioactive peptides are a very heterogeneous group of compounds that may influence several physiological functions in animals and humans. After a description of the properties of some bioactive peptides, an overview on the presence of such molecules in milk-derived products is given. The possible role of lactic acid bacteria in the release of bioactive sequences from precursor proteins is also discussed.
