Research has shown that the composition parameters which most of alI characterise asses' milk, differentiating it from cows' mi1k, are the protein and lactose levels. The quantity produced was about 7.23 kg/d, and if many animals were used, this volume would allow the successful use of this milk in pediatrics or in cheese-making to enrich the range of dairy products. Furthermore, thanks to particular, precise feeding regimes, it is possible to modify the lipid content, in particular the acidic compositi~n, towards an increased content of unsaturates. These results confirm the interesting possibilities for this product, which could contribute to a reevaluation of the species, maintaining and increasing the genetic reso\'.lfces of loca] breeds like the Martina Franca.
