In the present survey, cadmium and mercury residues in molluscs cephalopod have been determined in order to evaluate the risk for human resulting from the consumption of these organisms. On this basis, concentrations exceeding the established limits were observed for cadmium and total mercury respectively in 50% of the Sepia orbignyana and 50%, 20% of the Eledone cirrhosa and Eledone moschata. The data do not pose a risk for the consumer because the esteem of the weekly intake calculated is not beyond the limits imposed by the World Health Organization. However, it’s strongly recommanded to consume these metals hepatopancreas concentrations are relevant.
