Over the years, the food colourings (both natural and syntactical) have found wide application with the purpose of restoring the original coloration very often damaged by food productive technologies. Their use is "unnecessary" just finalized to improve the organoleptic food characteristics and to make them more desirable. However authorities found out that food colourings may cause toxic side effects like Sudan currently banished and Rosso Allura (E129, an azoic colouring) still allowed for glazes, drinks and sauces. Increased focus on artificial food colourings allowed natural food colouring market substantial growth due also to technological progress related to their extraction. In this note, after having traced a synthesis of the food colourings history, some natural ones will be analyzed with particular reference to the perspectives of industrial and market development in Puglia.
