The objective of this contribution is to explore the adaptive capacities of some historical artefacts in Puglia, in the south of Italy, in order to grasp methodological aspects aimed at promoting sustainable projects of the current landscape. The study focused on fortified farms of the sixteenth century for the “defense” of the territory intends to arrive at a project idea of “defense” of the landscape of olive groves.
