Fermented sausages contaminated by E. coli 0157:H7 have been responsible for serous food-born diseases. In this note, the Authors describe the ability of E. coli 0157:H7 to survive and produce veroci-totoxins in vacuum packing stored fer-mented sausages. The E. coli 0157:H7 strain was able to survive and produce verocitotoxins up to the sixtieth day of storage.

Abstract
