Nowadays, food service sector represents an important issue, due to the generation of different environmental burdens. Fort this reason it is important to find solution to reducing its impact by changing the way we produce and consume. In this paper we provide a twofold analysis: firstly, through the life cycle analysis (LCA), we assess the environmental impacts of one average menu taken as a reference, produced for school canteen in Bari, Apulia region, (baseline scenario), to identify which phase of meal production has the most impact; secondly, we propose an alternative scenario replacing red meat with white meat within the reference menu to evaluate how the total environmental impact changes.
