The last years were characterized by industrial and economical growth that caused a great withdrawal of natural resources and a consequent release of waste in the environment. The energy and material flow analysis, with its application to the production commodity cycle, represents a useful tool to evaluate the natural resources employed from a quality and quantity point of view; it is also useful to evaluate the environmental burden in the several economical and industrial areas. This paper analyses the material and energy flows of beet sugar, an interesting commodity for its high nutritional and economical value, which characterises the economy of Southern Italy and Apulia. The analysis has been applied to the whole production cycle: sugar beets cultivation, beets industrial transformation into sugar, final product national distribution.
