The duo agriculture and tourism has a recent origin. The reason can be find on one hand in the need for diversification and expansion of the possibilities offered by the countryside, linked for one period to the agricultural production, in favour of the different rural activities that can be practised, and on the other hand for the rise of new motivation at the basis of the touristic consumption, both as a specific segment (farm holidays and rural tourism) and as a niche segment, as the wine and food tourism. In this context the territory is first of all referred to as a set of local resources and signs of the production places. In the territory there are different elements that allow the launch of synergies. The typicality, for instance, considered a rescue for culture and identity of the production places and of the typical products or of the wine and food products, linked to the traditions, is one of the most important element for the value of the local resource This article aims to analyse this topic through the establishment of the “Strade del vino” in Italy and the example of Apulia, as a regional case, and the wine and food itineraries, expected for this region, that are a more integrated touristic offer.
