In recent decades, there has been a growing interest in innovative plant products such as microgreens and baby leaves, considered foods with high nutritional density and compatible with eco-sustainable agriculture models. These products represent different phenological stages of the plant, characterized by a short culture cycle and a high concentration of bioactive compounds. This study investigated microgreens and baby leaves belonging to the Brassica botanical family, known for its peculiar phytochemical profile and high content of secondary metabolites with biological activity, such as polyphenols and glucosinolates. The aim of this work was the qualitative and quantitative characterization of additional nutraceuticals, such as phytosterols and carotenoids, using targeted metabolomics approaches based on mass spectrometry. In particular, phytosterols were analyzed by liquid chromatography-mass spectrometry (LC-MS) techniques, using methods with high sensitivity and selectivity. Carotenoids were instead studied by an LC-MS approach, integrated with UV-Vis spectroscopy and supported by the use of ion mobility spectrometry-mass spectrometry (IMS-MS), in order to improve the structural separation and discrimination between isomeric species. The integration of chromatographic techniques to advanced mass spectrometry has enabled an in-depth characterization of the nutraceutical profile of innovative Brassica vegetables, providing detailed information on metabolic variations associated with developmental stage and their potential functional value.

Abstract
The integration of chromatographic techniques to advanced mass spectrometry has enabled an in-depth characterization of the nutraceutical profile of innovative Brassica vegetables, providing detailed information on metabolic variations associated with developmental stage and their potential functional value.| File | Dimensione | Formato | |
