More and more people follow tourist-gastronomic itineraries and related events for cultural and economic reasons. Among the many events, the festivals of typical local products stand out, which currently represent a significant component of the tourist valorisation, more specifically, of small towns. From a methodological point of view, the scientific contribution is made up of three parts. The first analyzes the concept of traditional food in the light of the most recent literature and how this can be considered a very important tourist resource. The second part examines the concept of the festival and how this event has acquired tourist interest, and finally the last part is interested in the Mushroom Festival of Cusano Mutri, a small Samnite center located in the Matese area.
