In this paper the authors will explore the technical and economic opportunities of employment of a natural sweetener, stevioside from,, Rebaudiana Stevia Bert. The leaves of this plant are used since a long time in Japan and in Latin America as sweetener and as anti-fungicide. The European Union, where the sweeteners are disciplined by a strict legislations, has forbidden the use of this plant as food or simple ingredient allowing only the usage as ornamental plant.
