The purpose of ostrich slaughtering in Italy is the adaptation of mammals lines (pigs and cattle); actually, we find eight CEE factories waiting for definitive authorization to ostrich slaughtering. This study underlines the safety engineering aspects, to preserve employed manpower from injuries; it were defined safety engineering aspects common to the slaughter processes, but in the ostrich case higher probability of doing someone by workers inability and technical likeness too is caused. Moreover, typical ostrich slaughtering risks are defined; the most significative of them are referred to slaughetering phases when ostrich are almost alive. Some machines and plant solutions to reduce typical risks are proposed.
