The edition of didactic exhibition 'EΛAION OLEVM OLIO. Coltura e cultura dell’olio d’oliva in età romana' (Andria, courtyard of the church of ‘San Francesco’, March 15th and 16th 2012) represented an opportunity to figure out the importance of the culture and cultivation of the olive tree here in Apulia, and may represent the chance to propose a historical and archaeological project to analyse olive oil production, commercialisation and its uses locally and during ancient ages. This project may support local landscape management and cultural sustainable tourism.
