The aim of this work is to reconstruct the history of Apulia fish culture, between the Byzantine and Norman age, moving from a comparative analysis of both public and private sources. It appears then evident that the consumption of fishery attracted not only the regal affairs, but also the monastic ones being the convents among the principal owners of the medieval alieutic fittings. The examination of some documents, mostly of ecclesiastical origin, has allowed to attest a dynamic fishing activity and to trace a first outline of the complex aspects of fishing organization: ius piscandi, methods and strategies of fishing, boats, fishermen’s communities, the great variety of fish in the region.
